Chicken Salad for Patio
INGREDIENTS
5 lbs. of Pulled Chicken, Legs and Breast, roughly 4 chickens
1 Red Onion Chopped
2 Stalks of Celery
1 Bunch of Basil, Chiffonade
1 Pint Cup of Raisins
2 Pint Cups of Mayo (Can use light or fat free) ¼ Cup of Honey ½ Cup of Sherry Vin
2 Bunch of Chopped Chives
METHOD
Pull chicken, lightly smoke. Plump raisins in vinegar. When chicken is cool, add in a large bowl, raisins, basil, chopped red onion, light mayo, celery, onions, chopped chives reserve some for garnish.
Season with salt and pepper. Garnish with chopped chives.
