The Dish: Burtons Grille -- Grilled Salmon with Mango Salsa

Fish is an important part of a healthy diet, and tonight we're continuing our month of nutritious recipes with an easy way to get some seafood on your plate. 7's Frances Rivera heads to Burtons Grill to make grilled salmon in ‘The Dish.'

The Dish:  Grilled Salmon with Mango Salsa

Yield: 2
Tools Needed:
Grill, Tongs, Platter, Small Mixing Bowl

Ingredients:
2 ea. 6 oz. Wild King Salmon
2 tsp Bronzing Seasoning
2 oz Olive Oil for grilling
1 cup Mango Salsa, room temperature
1 ½ oz Pea Tendrils
½ oz Olive Oil/Lemon Juice
Sea Salt
2 Tbsp Pepitos

Mango Salsa:
2 cups mango
¼ cup red pepper
½ cup grilled red onion
2 tbsp. jalapeño
2 tbsp. cilantro
1 tbsp. fresh squeezed lime juice
Mix all ingredients well and serve on top of salmon.

Method:
1. Season fish evenly on both sides with bronzing seasoning, brush with butter and sear on grill, rotating fish a quarter turn after 2-3 minutes. Continue to cook for an additional 3 minutes then flip fish and repeat process until cooked through.
2. Place grilled salmon on a plate and top with mango salsa.
3. Toss pea tendril with olive oil/lemon mix and finish with some sea salt
4. Sprinkle pepitas over pea tendrils for an added flavor and texture.
